My turn I chose to BBQ tri-tip. Same wood charcoal, apple wood for smoke.

Let tri-tip come to room temp. Then rub in rough salt and (lightly) crushed peppercorns on both sides.

then brush a light coat of olive oil and add some more salt n' pepper

firing up the mini-me sized grill

soak the apple wood chips in water about 30 min before using.

Put the wood chips in a foil bag with some small holes and place to one side. All the coals should be moved to the other side. You don't want coals under the meat as it will burn.

Cook with the lid on, about 15 min a side. A good instant cooking thermometer is really handy here, I get the center to 120f then pull off the grill, cover with foil, and leave it for 10 minutes. After the 10 min I put it back on over the coals and sear each side about a minute. Then it's ready to serve as it's already "rested" for 10 min to finish cooking and redistribute the juices.

Here's the result, and yes, it tasted as good as it looked :)
