Internets LOL

I've been using Ubuntu 6.06 LTS Server as a desktop OS for the past week or so, and it's good, but not great. I don't really like the APT package management, and I guess I want to try something else. I'm looking at a BSD distro. Which one should I pick? I want something that will teach me Unix skills and something that is customizable (ie, no preloaded packages, just a good initial installer so I can set up the partitions). Is FreeBSD what I'm looking for? What kind of an installer does it include, and does it have a dual boot feature that automatically sets up GRUB for me?
