You've obviously never had Sous Vide fries then. You cook the potatoes at 112 for 18 hours to allow the starches to release. Then you cut them into 1/8 Inch (max) diameter "fingers" that should not exceed 3.16 inches. Once cut, you wrap the fries in cheesecloth and then par blanch them in Distilled water for 12 minutes per pound of potatoes. This helps leech out any impurities and prepares them for the frying phase. Once your Non-GMO Peanut Oil is at 372 (NEVER go to 375), you place ONE fry into the oil at a time. This prevents "oil shock", which is the condition where dropping a batch of potatoes into the oil at the same time causes a sharp reduction in overall oil temperature, which then, instead of browning the outside within the first 6-8 seconds, allows more oil to leech into the fries, which leads to a less desirable crunch rating. Each fry should take no more than 14 seconds to achieve perfect crispiness and a soft center. Once you have cooked each fry individually, you crack Dead Sea salt over them, making sure to apply 26 grains of salt per fry. This is the correct number that allows the salt to wick what remaining moisture is in the fry and to keep it perfectly crispy. The "26 grain rule" is applicable for anyone making fries in a location with 80% relative humidity. For every 3% of relative humidity higher, you must add 6 grains of salt. The same is true when dealing with less than 80% humidity. You just remove 4 grains of alt for every 3% humidity reduction. Once all of your fries have been hand seasoned, you then throw them in the trash and drive to Wendy's and get a Large Fry.
