Question about Car Cooling Systems

I have a 2005 Buick Rendezvous that is acting very strangely. When I first bought it (actually someone bought it for me), the thermostat started bouncing up and down after the first few miles of driving. I checked the coolant level and there wasn't hardly anything in it. I filled it with coolant and it ran good for about a week, then it started again. I checked the coolant level and it was fine. I first thought there was air in the system, so I lifted the front end up and started the engine with the bleeder valves open. I could hear the air escaping and then straight coolant came out. I closed it back and now while driving the heat will temporarily stop, then start again. When the car is moving, the temp will set right above 1/4, then will jump to 3/4 and will come back down again.

Anyone here know what could be causing this?

what's the color and consistency of coolant? what's the color of the oil? does the heater still work properly? anything coming out of the tailpipe? any leaks underneath the vehicle?

Found that the carpet on the passenger side was damp which was an indication that the heater core was leaking, then when I start the engine there was white smoke coming from the exhaust with small droplets of water coming out which was an indication that there was a crack in the head gaskets. Both were repairable, but the decision was made to simply get rid of it.
