What did you use for the breading? Almond flour stuff or pork rinds? I've never had good luck with breading on the Keto recipes. I want some crunch so bad but it's hard. Best bet would probably be an egg wash and some pork rinds that were ran through the food processor so they're ulta-fine.

eggs + franks red hot for wash

breading was 50/50 almond flour and pork rind... the reddit poster had way better results in that dept

I should have used food processor, I was lazy and fucked up immersion blender instead.

Yeah you have to get the Pork down to a dust almost. N2B for your first try though homie. Stuffed peppers sounds gooood. I think I'm doing Pork Chops tonight. Not even going to waste my time trying to bread those bitches. Just gonna sear the snot out of them win oil and butter. I need an easy meal tonight.

fmr boss stopped by to chat and said that I should consider doing them...

i've been extremely well disciplined

/r/keto says it's not really needed for sedentary fatties, that it's really just an excuse to cheat but that those cheat days can get you past "plateaus" which I seem to be in now.

then he also said under his breath "you should get some trucker speed"

I'm a firm believer in cheat meals and hell, cheat days. You don't approach it so much as a diet as a change in eating habit. I basically reward myself every 5 pounds down with a cheat meal. Every 10 pounds down, a cheat day. And if you plateau (which I did), I would just have an incredible weekend plowing anything I wanted and then on Monday I was right back to it, staying strict. The worst I've seen after a 3 day food bender was 5 pounds. I got that 5 pounds off in exactly 6 days after I weighed myself, and then kept going. Don't be afraid to treat yourself, because it also shocks your body a bit. It reminds it what insulin can do, and when you take that sugar away, it throws itself back into gear (ketosis)

As for the trucker speed, Ephedrine is some great stuff. You can grab a box of Primatene Tabs without a prescription from any CVS/Walgreens (one box per month max to keep you from actually making Meth with it ), and that's not the fake shit. It's true Ephredrine HCL, and it does work well (2 pills when you want some pep). It also kills your appetite, so it's win-win. Just make sure you don't have high blood pressure before taking it, because it will definitely boost it a bit while on it. I tend to take it whenever I know I'm going to be around a ton of food I shouldn't indulge in. It helps.

I sauteed the jalapeno before stuffing which totally killed the heat... Also, I won't be using shredded mozzarella again. I used goat cheese in other ones and it actually survived, intact, added flavor... Also next time... Less time cooking, maybe higher temp, definitely more time broiling. I couldn't broil much at all or else they'd be dry as shit. Some redditor recommended 375 for 60 minutes which is fucking crazy.
