Pork with Curried Orange Sauce.

A little different and pretty simple.

1) Sauce:

(As written, but I usually double this)

1/2 tsp curry
1/3 cup orange marmalade
1.5 tsp prepared horseradish
1.5 tsp balasamic vinegar
1/4 tsp crushed red pepper (or to taste)

2) Pork chops
mix 1/2 tsp curry powder with 1/4 tsp paprika and sprinkle on pork chops.

Fry porkchops in skillet (recipe says nonstick, but whatever) until done
Remove said meat
Add sauce mixture and reduce it down a bit, mixing it with the pork bits left in the skillet.
Pour sauce over chops.

Best served with a good saffron rice.

Creamed Spinach and Onions

1 Tbsp butter
1/2 lb. pearl onions, peeled (fresh)
2.5 lbs spinach (fresh) washed
1 cup heavy cream
1/4 lb grated parmesian cheese (I end up using a lot more)

I take the onions, cut off both ends and then peel off the outer layers. Saute them in the butter until translucent (or browned a bit) Lower the heat and add the spinach (you will need a big pot but it cooks WAY on down). Once it is all cooked down, remove it. Then add the cream to the pot and reduce to about 3/4. Combine the spinach and add salt & pepper (I add some EXTRA Parmesian cheese)

Spoon into a gratin dish and top with more parmesian cheese. Bake at 350 about 20 minutes or until bubbly.

I might as well post something. My parents liked it so I dunno if they are just being nice or if its actually good so try at your own risk If the response is good, I'll post my other stuff too

Turkey Drum Sticks
- 4 Turkey Drum sticks
- Salt + pepper
- Splash of Cooking wine
- White wine
- Balsamic Vinegar
- 1 large carrot
- 2 stalks of celery
- Half a white onion
- 2 tsp of oregano
- 2 tsp of tarragon
- 1 orange – zest and juiced
- 2 tsp of sugar
- Garlic and herbs (bottled)
- 1 can of chicken broth
- 1 piece of ginger
- Corn starch (optional)

Turn oven to 375F

Turkey – RAW MEAT
1. Score 4 turkey drum sticks
2. Sprinkle and evenly cover with Kosher salt. Freshly ground black pepper
3. Sear lightly
4. Set Aside
Vegetables and Marinade
1. Finely dice carrot, celery stalks, ginger and onion. Set aside
2. Zest 1 orange and juice it. Set aside
3. Combine cooking wine and balsamic vinegar (enough to cover 4 drumsticks)
a. Add in – oregano/terragon/orange juice
1. Using either metal pan or one made with foil, place half mixture of carrots, celery stalks, ginger and onion on the bottom
2. Place 4 drum sticks on top of the vegetable mix – Rub in orange zest, sprinkle garlic and herbs to cover. Splash cooking wine and balsamic vinegar alone with herbs.
3. Place remaining vegetable mix on top
4. Pour in 1/2 cup of chicken broth
5. Seal up and place in oven (375-400F) for 45 to 1h.
6. When fully cooked, take out drum sticks, set aside
7. Take remaining vegetables, heat over medium high heat in a pan, splash with white wine. Reduce to a sauce, ***optional*** use cornstarch to reduce
8. Serve sauce with turkey
