great veggie recipes?

I am cooking a dinner party for my wife and her girlfriends. Its a bday gift for her, girls only.

half are vegetarian so alot of my standbys are out of the question. Anyone have a veggie recipe that is out of this world? Also, extra challenge, some have dairy issues, so if you have one with no dairy, that would be awesome.

I know I could look it up, but I am looking for something that is amazing vs just good. Hopefully you guys can help.

Unless your guest are heavy vegans and object to soy sauce, this could be a good recipe. I plan to make it asap, it sounds excellent to me.

do some grilled veggies on the bbq zucchini is fabulous, bit of olive oil, salt and pepper
Some ppl are like slinkies. Not much use, but make u smile when you push them down the stairs.

find a good hummus recipe online and make it, then take a whole bunch of celery or other di able veggies like celery, or bread. I got a recipe for naan i could dig up and post (but its only amazing if you have Ghee)

I like using various seasonings with vegetables. Try Zatarain's Crab Boil with just about anything--broccoli, squash, zucchini, okra, asparagus--think of how to season them with interesting things. Curry powder and garam masala make for tasty veggies. Tomato sauce is great texture/flavor enhancer. Vegetable bullion cubes/better-than-bullion are great.

Grilled zucchini are just great. We always put some olive oil and garlic + pepper and salt on them. Yummy. We also grill tomatoes and paprika.

Mediterranean Chick Peas

4-5 large garlic cloves, chopped
one red onion, sliced
Sautee these together in olive oil until browned

Add 2 cans chick peas, drained
Squeeze 1/2 lemon over this
4 turns of rock salt
pepper to taste
Heat up

In rice cooker, use brown rice but add 1/2 cup green or brown lentils. Compensate water measurement to account for lentils.
Salt to taste.

Serve Chick Peas + mixture over rice.

Enjoy amazing lovemaking after they eat your meal.

Vegetable Provencal

1 C Red onion small slices
1-2 T Chopped Garlic
1 C Red and green peppers sliced
1 C Zucchini small chunks
1 C Chopped Tomato
˝ C Red wine (optional)
1 ˝ C Red Kidney Beans
˝ C chopped fresh parsley
2t Thyme
1t Oregano
1T tomato paste (or 2T ketchup)
Salt, Pepper, black or green olives to taste

Sauté onion and garlic until slightly brown
Add tomatoes sauté 2-3 minutes
Add tomato paste and Red Wine stir add salt and pepper
Add the remaining veggies, Thyme and Oregano
Cover cook 2 minutes
Remove from heat stir adding parsley
Serve over Brown rice or couscous garnish with olives, hot peppers, Feta Cheese …

Last one:

Zucchini-Corn Skillet

3 zucchini sliced in half moons
1 TBSP olive oil
1-2 garlic cloves
2 cups frozen corn
2 roasted peppers, chopped
1/2 tsp salt
2 TBSP chopped, fresh basil
1/2 tsp lemon pepper

In skillet sautee garlic in olive oil. Add zucchini, corn, roasted peppers, salt & lemon pepper. Stir together and sprinkle fresh basil over top. Serve.
Can serve over rice as dinner.

I love making penne with brocoli, a lot of olive oil, salt and pepper, a little paprika, LOTS of basil and if you can, find some vegan cheese to put on it or just put vegan cheese and normal cheese on the table for those who want it. You could always make it with eggplant as well.
