Easy Banana Nut Bread

The lady that runs this blog posts amazing recipes. I have tried two from her site already since finding it last week, and have at least two dozen more bookmarked.

Banana Nut Bread:

* 1/2 cup of butter, softened
* 1/2 cup of white sugar
* 1/2 cup of brown sugar
* 2 eggs
* 1 cup of flour
* 1/2 cup of whole wheat flour
* 1 tsp baking soda
* 1 tsp salt
* 1 cup very ripe bananas, mashed (I used 2 very ripe bananas)
* 1/2 cup of sour cream
* 1 tsp vanilla
* 1 cup of pecans, chopped


1. Preheat the oven to 350 degrees.

2. Place the butter, sugar, vanilla, and eggs together in a bowl and beat with a mixer on low until creamy.

3. Combine the dry ingredients in a separate bowl and mix well. Slowly add the flour mixture to the sugar mixture. Add the bananas, sour cream, and nuts, stir well to combine. Pour into a 9x5x3 loaf pan that has been coated with cooking spray. Bake for 1 hour or until a tester inserted into the center comes out clean. Cool on a rack. Slice and serve slathered with butter. Enjoy.


Mine actually took about 70 minutes to cook. I took it out at 60 minutes, but a toothpick in the middle didn't come out clean, so I put it back in for another 10 and it came out perfect. Right out of the oven I transferred it to a rack to cool for two hours before cutting it.

Awesome! I am so on board with any baked goods recipe that has sour cream in it, though I prefer applesauce in banana bread. I'm going to have to try this when my bananas ripen.

My chicken is thawing and it will marinate tonight.

She says to marinate for four to six hours. I wonder if overnight will be too much. Otherwise, I could make the marinade and do it in the morning, which would still be more than six hours. Nine to ten actually.

This is true. The lime juice goes in 15 minutes before cooking and that's what I was worried about being in there too long.
