well i DO use a crock pot often, but you're supposed to flour and pan-sear the roast well on all sides before you put it in there, i generally do a 2-3 lb roast with 4-5 fist sized potatoes, 2 fist sized onions, 4 carrots, 2 cloves garlic or equivalent of dry, 1 bay leaf, salt, pepper, and thyme. some people inject the garlic into the meat by making a slice i don't i think it lets the juices out of the sear and contributes to dryness in the meat (which is the whole point of searing in the juices )
